Baba ganoush is made with eggplants. Eggplants are rich in fiber, which is very important for our health. They help with good intestinal health, give a feeling of satiety and keep blood sugar levels stable.

Recipe

Ingredients

- 2 eggplant

- 3 tbsp white tahini

- Pinch of cumin

- 2 cloves of garlic

- 2 tbsp lemon juice

- Pinch of salt and pepper

- Dash of olive oil

- 2 sprigs of parsley to garnish


Preparation method

1. Preheat the oven to 180°C.

2. Cut the aubergines in half lengthwise and sprinkle with olive oil. Place the eggplant, cut side up, on a baking sheet.

3. Bake for about 45 minutes until the flesh is completely soft.

4. Scrape the flesh from the eggplant skin with a spoon and place in a food processor, together with the garlic cloves. Add the tahini, cumin powder and 2 tablespoons of olive oil. Mix together into a fine puree.

5. Place the puree in a bowl and garnish with a little extra oil, pomegranate seeds and parsley. Delicious with some pita bread or naan bread.
