Research has shown that eating a raw carrot every day has a positive effect on blood pressure and estrogen levels. This is due to the presence of a unique type of fiber that helps to balance the amount of estrogen.

Recipe


Ingredients

- 160 gr oat flour

- 50 g almond flour

- 150 g grated carrot

- 1 egg

- 1.5 tsp cinnamon

- 15 g baking powder

- 2 tsp gingerbread spices

- 100 ml (melted) coconut oil

- 180 ml maple syrup

- 2 tbsp almond paste

- 50 g pecan nuts (for garnish)

Preparation method

1. Preheat the oven to 180 C.
2. Line your baking pan with baking paper or grease the edges.
3. Peel the carrots and grate them with a coarse grater. Set this aside.
4. Then mix all wet ingredients together in a bowl.
5. In another bowl, mix flour, cinnamon, gingerbread spices and baking powder.

6. Pour the wet mixture into the carrot and then mix it into the dry ingredients.
7. Mix everything well.

8. Pour the batter into the baking tin and top the cake with some pecan nuts.

9. Bake the cake for about 40 minutes until golden brown.
