Facts about blueberries
Blueberries contain a plant compound called anthocyanin. This gives blueberries both their blue color and many of their health benefits.
Blueberries may help with heart health, bone strength, skin health, blood pressure, diabetes management, cancer prevention and mental health.
A cup of blueberries provides 24 percent of a person's recommended daily intake of vitamin C.

Recipe

Ingredients

-4 ripe bananas

-4 eggs

-100 gr almond flour

-100 gr oat flour

-50 gr medjool dates

-200 g blueberries

-1 tsp baking powder

-100 gr coconut oil


Preparation method

1. Preheat the oven to 160 degrees and melt the coconut oil.

2. Wash the blueberries and keep them aside.

3. Place all other ingredients in a mixing bowl and stir well.

4. Carefully fold the blueberries into the batter.

5. Grease 15 muffin tins with coconut oil (or use a silicone muffin tin) and spoon the batter into the moulds.

6. Place the muffins in the preheated oven and bake for 20 minutes (if a skewer comes out clean, they are done).

7. Let the baked muffins cool slightly before removing them from the tins.
