Teff flour is hidden in these delicious pancakes. Teff is not only very healthy, but also very nutritious. It contains a lot of essential nutrients and is very rich in fiber, which can help you with healthy bowel movements. Teff flour is also gluten-free.

Ingredients
- 2 eggs
- 180 ml almond milk
- 90 gr rice flour
- 190 gr teff flour
- 1 tsp vanilla extract
- 1 tbsp date syrup
- 1 tsp spirulina
- pinch of cinnamon
- 1 tsp coconut oil (+ for frying)
Preparation method
1. Beat the eggs together in a large bowl.
2. Melt the coconut oil and add to the bowl. First add all the wet ingredients to the bowl and mix.
3. When all wet ingredients have been mixed, the dry ingredients can be added.
4. Over medium heat, add more coconut oil to a nonstick skillet. Pour 1/4 cup of batter into the skillet and spread over the pan.
5. Turn the pancake when bubbles appear on the surface.
6. After flipping, cook for another 2 minutes or until the pancake is lightly browned and cooked through in the center.
7. Continue this until all the batter is used up.
Garnish with desired toppings. I used banana, blueberry compote and pomegranate.
