Ingredients
- 2 eggs
- 80 gr feta cheese (goat/sheep cheese)
- 1 leaf of romaine lettuce
- 1 handful of finely chopped dill
- 1/2 avocado
- 1 sourdough sandwich
Preparation method
1. Toast the sandwich.
2. Heat a frying pan with a spoonful of coconut oil.
3. Finely chop the feta and add it to the pan. When the cheese turns a little golden brown, the eggs can be added to the pan.
4. Mix the eggs well with the feta until scrambled.
5. Place the lettuce leaf on the sandwich and cut the avocado into thin slices and then place them on the lettuce.
6. The scrambled eggs can be added to the sandwich.
7. As a final touch, finely chop some dill and add it.
8. Sprinkle with some pepper and Celtic sea salt. And enjoy!
