Ingredients
- 200 g iceberg lettuce or romain lettuce
- 1/2 cucumber, in small cubes
- 1 handful chives, finely chopped
Dressing
- 2 handfuls of fresh spinach
- 2 handfuls of fresh basil
- 1 clove of garlic
- 2 tsp lemon juice
- 60 ml olive oil
- 25 g cashew nuts
- 10 g pine nuts
- 3 tbsp nutritional yeast flakes
- 2 tbsp apple cider vinegar
Preparation method
1. Chop the salad ingredients and place in a bowl.
2. Then mix all the ingredients for the dressing in the blender.
3. When the dressing has been mixed completely, it can be poured over the salad.
4. Mix the salad well.
5. Top the salad with some more pomegranate seeds. And this delicious salad is ready to be served.
