Ingredients
- 1 striped eggplant
- A handful of germs
- 1 red pepper
- 1 garlic
- 6 tbsp traditional olive oil
- 2 tbsp lemon juice
- 1 carrot
- 1 naan bread (gluten-free)
- 1/2 avocado
- Lemon or lime
- Celtic salt and pepper
- Chili flakes
Preparation method
1. Preheat the oven to 220°C. Cut the vegetables into slices and place the various vegetables in an oven dish.
2. Mix the olive oil with the garlic, pepper, salt and Italian herbs and sprinkle the oil mixture over the vegetables.
3. Place the dish in the middle of the oven and roast the vegetables for 15 minutes. Place the naan bread in the oven for the last 5 minutes to cook.
4. In the meantime, smash the avocado. Mash the avocado flesh, season with a few drops of lemon or lime juice, salt, pepper and chilli flakes.
5. Cut the naan bread in half.
6. Spread the naan bread with the avocado and then put a dollop of sprouts on the sandwich.
7. Then add the grilled vegetables and put the 2nd half of the sandwich on top.
8. Now you have a delicious healthy sandwich! Enjoy your meal!
