Eggplants are rich in fiber, which is very important for our health. They help with good intestinal health, give a feeling of satiety and keep blood sugar levels stable.

Ingredients

-extra virgin olive oil
-1 eggplant, cut in half lengthwise
-spices, pakrika powder, onion powder, cayenne powder, salt and pepper.

Preparation method

1. Preheat the oven to 240 °C.

2. Halve the aubergines with stem lengthwise.

3. Make crosswise slits in the flesh, but leave the skin intact.

4. Make a dressing with some olive oil and herbs.

5. Place the eggplants, cut side up, on a baking tray lined with baking paper. Divide the dressing over the eggplant halves.

6. Roast in the oven for about 30 minutes.

8. When the eggplant is soft enough you can serve it on the plate. Enjoy your meal!
