Carrots contain vitamins B1, B2 and B6. The vitamin B complex is important for a strong immune system, properly functioning nervous system, good digestion and a correct hormone balance. Research has shown that vitamin B6 plays an important role in fighting inflammation.

Recipe

Ingredients

- 800 g rainbow carrots (or carrots)

- 1 tbsp thyme

- 1 tbsp honey

- Olive oil

- Pepper and salt

- feta cheese

- juice + zest of 1/2 lemon

- 1 garlic clove

Preparation method

1. Preheat the oven to 180 degrees (fan). Scrape the skin from the carrots.
2. Divide the carrots over a baking tray, mix with some olive oil and salt and pepper to taste. Divide the thyme sprigs over it. Roast the carrots in the oven for about 25 minutes

3. Place the feta, garlic clove and lemon juice + zest in the food processor.

4. Grind until smooth and creamy.

5. Spoon the whipped feta into a bowl and spread it out gradually.

6. Garnish the spread with extra virgin olive oil, some extra lemon zest and a pinch of black pepper.

7. When the carrots are ready, they can be placed on the spread.

8. Garnish with some fresh herbs, salt and pepper, if desired
