Pasta sauce is really the ultimate way to secretly throw in extra vegetables. And also to use up leftovers, so it's also incredibly waste-free.

Recipe

Ingredients

- 300 g penne

- 100 g olives

- 200 g spinach

- 1 clove of garlic

- 50 g cashew nuts

- 50gr grated cheese

- 1 tbsp lemon juice

- 1/2 avocado

- 2 tbsp pine nuts

- 2 tbsp nutritional yeast flakes

- olive oil

- Pepper and salt

Preparation method

1. Cook the pasta according to the preparation method on the package. Drain, leaving a splash of pasta water.

2. In the meantime, blend all the other ingredients together in the blender into a creamy sauce.

3. Add the creamy sauce and pasta water to the penne and mix well.

4. Serve the pasta and enjoy!
