- 300 g chickpeas
- 400 ml coconut milk
- 1 large red onion
- 1 clove of garlic
- 300 g spinach
- 1 can of tomato paste
- 1 handful of fresh coriander
- 200 ml coconut cream
- Pepper and salt
Preparation method
1. Finely chop the onion and garlic. Heat a little coconut oil in a pan and fry the onion and garlic.
2. Add the tomato puree to the bowl and stir well.
3. Now that the curry base is well seasoned, the chickpeas can be added. You also stir this well.
4. Add the coconut milk and stir.
5. Finally add the spinach and put a lid on the pan and let it sit for approx. Simmer for 15 minutes.
6. When it starts to resemble a curry, the last ingredients can be added. Place a few teaspoons of coconut cream and coriander over the curry and spread.
7. Season with some salt and pepper.
8. This curry is ready to be served. Possibly as a dip, delicious with sourdough bread or naan bread. The curry can also be served with some rice or quinoa.
