If you regularly include sweet potatoes on your menu, you get a lot of good nutrients that contribute to good resistance, strong bones and muscles, good blood pressure and healthy bowel movements.

Recipe

Ingredients 2 pers.

- 2 large sweet potatoes

- 2 tomatoes
- ½ red onion
- ½ red pepper
- 1 clove garlic
- Pepper and salt
- Olive oil

- 1/2 block of tofu

- 1 can of corn

- 10g fresh coriander

- 75 g tomato sauce

- 1 tsp paprika powder

- ½ tsp cayenne pepper

- ¼ tsp garlic powder

- ½ tsp turmeric

- Pinch of salt and pepper

- 2 tsp cream

- 1 sprig of spring onion

Preparation method

1. Preheat the oven to 200 degrees.

2. Brush the potatoes with a little olive oil, poke holes in them with a fork and roast them in the oven for 45 minutes at 200 degrees.

3. Heat a large frying pan with some olive oil, all the herbs and the tomato paste.

4. Cut the tomatoes into cubes and drain the corn.

5. Finely grate the tofu and add it to the pan with the corn and tomatoes. Stir well.

6. Remove the baked potatoes from the oven, cut them open and fill with tofu.

7. Place a spoonful of cream on top and serve with fresh coriander and spring onion, if desired.
